Pete and Frances Miles opened Storm in October 1999. Their aim remains the same today as it was then to put the best fresh produce including fish, shellfish, meat and vegetables on the table.</p><p>Over time and with customer experience, the restaurant has evolved into a specialist fish restaurant which also incorporates fabulous meat and vegetarian dishes into their menu to ensure there really is something for everyone. Storm has a great team of people working within, people with similar beliefs and attitudes to life, food and drink and all this adds to the fun of eating at Storm. We offer a relaxed, informal place to eat with excellent food and wine. We hope to see you soon!
Pete Miles has been a fisherman since 1989, opening Storm Fish Restaurant, in Poole, with his wife Frances – in 1999. Storm is the only restaurant in Poole and Bournemouth for which the owner catches his own fish. If he doesn’t catch the fish, he knows a man who can!
Pete and Head Chef Paolo ensure that Storm’s menu changes daily, according to the fresh fish and meat available. Inside Storm, the interior is rustic, with wooden tables and old lamps hanging from the ceiling, providing an intimate, cosy ambience. Along with a great selection of local fish and shellfish, there is a good selection of meat and vegetarian dishes, incorporating flavours and influences from around the world. At Storm everything is made on the premises from the bread to the petit fours. The gorgeous homemade desserts finish off your meal perfectly. Having trouble choosing, then opt for the piggy’s platter – a selection of three deserts perfect for sharing (or not!).
Along with fishing and running a busy restaurant, Pete also grows his own vegetables and uses them in the restaurant during the spring/summer months and is a keen beekeeper, winning first prize with his honey last year at the county shows. Pete is a keen environmentalist and supports sustainable fishing and organically produced meat, matured at a natural rate, antibiotic free.
Paolo started working for Storm in 2005, for the first few years managing the front of house, where he commanded respect for his exacting standards, knowledge of food and wine and his welcoming manner. During this time Paolo’s talents in the kitchen were always put to good use, firstly by helping create some of our delicious desserts, petit fours and main dishes and finally since 2011 working full-time in the kitchen whilst he completed his formal Chef qualifications. Paolo has proved to be an excellent Head Chef and feedback from cookery courses always makes mention of his passion for cooking and his knowledge of his craft. He is an excellent teacher.
The menu offers exciting seasonal food for Storm which really does celebrate the joy of good food. Although we have a bias for fish, Paolo and Pete bring the most delicious meat and vegetarian options to the menu.
Erica and Tracey are our front of house managers. Tracy has worked for storm since July 2010 and and Erica joined us in 2011. Erica has a wealth of front of house experience behind her and brings a lovely holistic view to the service as Storm, with her warm and welcoming smile and charm, she really knows how to look after our customers. We frequently receive great feedback from our customers about how Erica has looked after them.
Tracy comes from a background of over 15 years of event and catering management working for some well–known companies managing large brigades of staff. Tracy shares our passion for great food and great service and loves being part of the not too conventional team at Storm.
The rest of the crew are Jessamine, David, Lucy, Millie, Willow and Alex who work out front and also help to get through the mountains of washing up out back. Pete and Frances can be seen giving guest appearances on some Saturdays and busier nights in the summer, either in the kitchen or out front. Storm is a perfect place to bring overseas guests, clients, colleagues, friends and family. You can be assured of a friendly, warm welcome and great food – always.
